Three centuries on the mountain
Banana came to this coast early. The plant is not native to Brazil — its wild ancestors grow in Southeast Asia and the western Pacific — but it travelled well, and by the time the gold road was cut up from Paraty into the mountains it had already become part of everyday life on the Costa Verde. On a warm, wet, frost-free slope like this one, with deep forest soil and water running through it, banana is close to the perfect crop: it feeds people year-round, it does not need replanting each season, and it thrives in the dappled light beneath taller trees rather than fighting them.
What we now call the farm grew up alongside the movement of people and mule trains through the valley. The same slopes that grew subsistence food for the families who lived and worked here were shaped, over generations, into workable terraces, threaded with the pack roads that carried goods between the coast and the highlands. Bananas were part of that traffic — sturdy, filling, and forgiving of a long walk to market. Three centuries later the plants standing in the grove are not the original plants, of course. A banana is not a tree that lives for centuries; it is a fast-growing herb that lives a single season of fruiting and is replaced by its own offshoots. What has lasted three hundred years is the grove itself — the living, self-renewing colony of plants, the soil that has been built up under them, and the knowledge of how to keep it going.
That continuity is the point. When we describe the farm as three hundred years old, we do not mean a museum piece kept alive for show. We mean an unbroken line of cultivation on the same ground, using methods that were organic long before the word existed, simply because there was no other option on a remote mountain slope with no road for a truck. Reading the grove: the varieties we grow
Walk into the grove and it looks, at first, like one plant repeated a thousand times. It isn't. We grow several distinct varieties of banana, each with its own habit, flavour, and job in the kitchen, and once you learn to read them you start seeing the differences everywhere — in the height of the pseudostem, the angle of the leaves, the shape and set of the fruit. Brazil grows more kinds of banana than almost anywhere on earth, and the four described below are the backbone of this farm. We deliberately keep a mix rather than a monoculture, which is both a culinary choice and, as you will see later, a quiet form of insurance against disease.
Banana-prata
Prata is the everyday banana of Brazil — the one most people here picture when they say the word. It is medium-sized, slightly angular in cross-section, with a firm texture and a flavour that carries a gentle tang behind the sweetness rather than the flat sugariness of a supermarket export banana. It holds its shape well, which makes it as good fried or baked as it is eaten out of the hand. On the plant it tends to stand tall, and the fruit keeps a little longer once ripe. For most guests, prata is the taste they remember from breakfast.
Nanica
Nanica means "little one," a reference to the shorter stature of the plant rather than the fruit. This is the soft, sweet, thin-skinned banana closest to the type most of the world exports and eats — sometimes called água ("water") for how tender and juicy it is when fully ripe. It bruises easily and does not travel as well as prata, which is exactly why a banana grown a few hundred metres from where it is eaten tastes so different from one shipped green across a continent. Picked at the right moment and ripened slowly, nanica is intensely sweet and almost creamy.
Banana-da-terra (plantain)
Banana-da-terra is the giant of the grove — long, heavy, thick-skinned, and starchy rather than sweet. This is Brazil's plantain, and it belongs in the pot, not the fruit bowl. Green, it is firm and potato-like, sliced for savoury dishes; as it ripens toward black it turns sweeter and softer and becomes the classic banana frita, fried in slices until caramelised at the edges. It is a cornerstone of coastal Brazilian cooking, and it is the variety guests are most often surprised by, because it upends the idea that a banana is only ever a sweet snack. Banana-ouro
Ouro — "gold" — is the smallest and sweetest of the four, a slim, short, thin-skinned banana with a honeyed, almost floral flavour. The plants are delicate and the fruit is fragile, so ouro is rarely seen far from where it grows; it does not survive rough handling or long transport. That fragility is precisely what makes it a grower's treat. A hand of ripe ouro is one of the small luxuries of living on a banana farm — the kind of thing that never really reaches a city market in good condition, and so mostly stays here, eaten within a day or two of coming down the hill.
We grow a scattering of other kinds too, as most old Brazilian groves do, and we resist the temptation to standardise. Diversity of variety means diversity of flavour, a longer and more staggered harvest across the year, and — importantly — a grove that is far harder for any single pest or disease to sweep through. We do not publish yields or counts, because a working grove is not a spreadsheet; it ebbs and flows with the weather, the age of each stand, and the slow rhythm of replacement.
How a banana plant actually grows
To understand how the farm is managed, it helps to know what a banana plant really is, because almost everyone gets it wrong. A banana is not a tree. It is the largest herbaceous plant on earth — a giant herb — and the "trunk" you lean against is not wood at all. It is a pseudostem: a tight, juicy cylinder of leaf bases wrapped around one another, holding the plant upright with water pressure rather than timber. Cut one and it is soft and wet all the way through, which is why a fallen banana pseudostem rots down into the soil within weeks rather than years.
The real stem is underground. It is a swollen mass called a corm, or rhizome, and it is the part of the plant that actually persists. From the corm, the plant sends up its pseudostem and, over several months, unfurls a succession of huge paddle-shaped leaves. When it has grown enough, a flower spike pushes up through the centre of the pseudostem and bends over under its own weight. The flowers open in rings, protected by heavy purple bracts, and each ring becomes a "hand" of bananas. The whole cluster of hands is the bunch. At the tip, beyond the fruit, hangs the dark, teardrop-shaped male bud — the coração, or "heart" — which many Brazilian cooks harvest and eat as a vegetable.
Here is the crucial part for a farmer: each pseudostem flowers and fruits exactly once, and then it dies. There is no second crop from the same stem. But while it is growing and fruiting, the corm beneath it is already sending up new shoots — suckers, or "pups" — around its base. Growers manage these as a family. The fruiting plant is the mother; a chosen sucker is the daughter that will bear the next bunch; a younger one is the granddaughter waiting behind her. By keeping the right number of followers on each mat and removing the surplus, we keep an unbroken succession of fruit coming from ground that is never replanted. This is why a grove can be three hundred years old: it renews itself, generation over generation, from the same living corms in the same soil.

Organic and regenerative by necessity, then by choice
This farm has never used synthetic fertilisers or pesticides. Partly that is principle, and partly it is history: for most of the grove's life there was no road capable of hauling sacks of chemical fertiliser up the mountain, and no reason to want to. The soil here was built the way forest soil is always built — from the top down, by things falling and rotting in place — and the simplest way to keep a banana grove productive is to keep feeding that process rather than replacing it. What began as necessity is now a deliberate, regenerative practice.
Feeding the soil with the grove's own waste
A banana plant is mostly water and soft tissue, which makes it one of the most generous mulch-makers a farm could ask for. When a pseudostem has finished fruiting, we cut it down and leave it in place, often chopped so it breaks down faster. The great leaves, as they age and fall, do the same. This "cut and drop" habit returns nearly everything the plant took from the soil straight back to it — potassium above all, which bananas draw heavily and which the rotting stems release as they collapse. Over the leaf litter we add compost: kitchen scraps from the kitchen, spent plant material, and manure from the donkeys and mules that still work the roads. The result is a dark, spongy, living topsoil that holds water through dry spells and drains it through the heavy summer rains.
Shade and intercropping
Banana is a forest-edge plant, happiest in broken light rather than blazing full sun, so the grove is not a clearing but a layered system. Taller native trees stand through it, giving shade, dropping their own leaf litter, and holding the slope with deep roots. Beneath and between the bananas we grow other useful plants — the classic coastal mix of coffee, citrus, cassava, taro, ginger, and heart-of-palm among them — so that the ground is rarely bare and every layer of light is doing some work. Intercropping like this spreads risk, spreads the harvest across the calendar, and keeps a diversity of roots and flowers in the ground, which in turn keeps a diversity of soil life and beneficial insects. It is the opposite of a monoculture plantation, and it looks and behaves far more like the forest it borders.
Holding the slope: erosion control on a mountain farm
Farming on a steep tropical slope has one permanent enemy: gravity, working through water. When the summer rains come to the Serra do Mar, they come hard, and bare soil on a gradient does not survive that for long — it slumps, gullies, and washes downhill into the streams. Because three streams and four springs rise on this property and feed the seven waterfalls below, keeping soil on the mountain is not only a farming concern; it is a water-quality concern for the whole watershed.
The grove holds its ground in several overlapping ways. The oldest is the terracing itself, worked into the slope over generations and braced in places by the same stone edging that lines the donkey roads. Just as important is the living cover: banana mats with their dense, fibrous, shallow root networks bind the topsoil, and the thick permanent mulch of leaves and stems acts like a sponge and a brake, letting rain soak in slowly instead of sheeting off. We plant along the contour rather than up and down the fall line, so that every row and every path becomes a small barrier that slows water rather than channelling it. Ground is kept covered — with crop, with companion planting, or with mulch — as a rule, because bare earth on a slope is a wound. Done together, these practices mean the farm gives clean water to the streams instead of silt, which matters as much to the fish and the frogs downstream as it does to the next banana harvest.
The donkey roads: how the harvest comes down
You cannot understand this farm without understanding its roads. Long before there were vehicles here, there were mule trains — tropas — and the network of narrow, stone-laid, contour-hugging paths they wore into the mountain is still the circulatory system of the grove. These are the same kind of roads that carried Brazil's colonial gold down to Paraty along the historic Caminho do Ouro, built for animals and feet, not wheels, and graded gently enough that a loaded animal could walk them all day.
They still do the work. Much of the grove is too steep and too broken by terracing for any truck or tractor, so a cut bunch of bananas — which can be genuinely heavy — is carried out on human shoulders to a road, then moved down by donkey or mule to where it can be sorted and sent on. The animals set the pace of the harvest, and that pace is part of what keeps the farm gentle on the land: there is no heavy machinery compacting the soil, no fuel, no engine noise, just the roads doing the job they were built for three centuries ago. Managing pests and disease without poison
Bananas have their share of enemies, and a farm that refuses synthetic pesticides has to out-think them rather than spray them. The approach here is the one good organic growers everywhere rely on: keep the plants healthy, keep the grove diverse, keep it clean, and let a living ecosystem do most of the policing. A well-fed plant in living soil, with good airflow and its own predators around it, shrugs off a great deal that would flatten a stressed monoculture.
The main threats
Three problems matter most in a grove like this. The first is fungal leaf disease — the sigatoka leaf-spots — which thrive in warm, wet, still air and slowly kill the leaves the plant needs to fill its fruit. The second is the banana weevil borer, a beetle whose larvae tunnel into the corm and weaken the plant from below. The third is soilborne wilt disease, most notoriously the Fusarium wilt known historically as Panama disease, which lives in the soil and can render ground unusable for susceptible varieties. None of these can be waved away, and we do not pretend otherwise.
How we keep them in check
- Variety diversity. Growing several kinds of banana rather than one means no single disease can move through the whole grove unchecked. Different varieties carry different resistances, so a problem that hits one stand often stalls at the next.
- Sanitation. We remove and break down diseased leaves and spent stems rather than letting them sit as a reservoir of spores and grubs. A clean grove is a slow grove for a pathogen.
- Airflow and spacing. Managing the number of pseudostems on each mat, and keeping the canopy from closing up completely, lets air and light move through — which is the cheapest, most effective brake there is on the damp-loving leaf fungi.
- Trapping the weevil. The banana weevil can be monitored and caught using the plant's own cut pseudostems as bait traps, concentrating the beetles where they can be dealt with instead of chemically blanketing the soil.
- Healthy soil and clean planting material. Wilt and nematode problems are held back by starting new mats from clean stock, rotating where susceptible varieties grow, and above all by the deep, biologically active soil that a mulched, composted grove builds — living soil is competitive soil, and competition suppresses disease.
- Letting predators work. A diverse, unsprayed grove is full of birds, ants, spiders, wasps, and other natural enemies of the things that eat bananas. Poisoning the pests would poison these allies too, so we don't.
None of this is a silver bullet, and that is rather the point. Organic pest management is not one heroic treatment; it is a dozen small, boring, consistent habits that add up to a resilient grove. It is slower and more attentive than spraying, and it produces fruit we are entirely happy to feed our guests and our own families.

The banana year: the grove's calendar
People often assume a banana farm has a single dramatic harvest, the way an orchard does. It doesn't. A banana is not seasonal in that sense — an individual plant takes the better part of a year, sometimes more, to grow from a chosen sucker to a cut bunch, and because the grove holds plants of every age at once, at every stage from knee-high pup to mother in full fruit, something is always coming ripe. The farmer's calendar is therefore less about a harvest month and more about keeping the succession moving all year round.
The one thing that does swing hard with the season here is water. The Serra do Mar has a wet summer and a drier winter, and the two halves of the year ask different things of the grower. Through the hot, wet months from roughly spring into autumn, the bananas put on their fastest growth — leaves unfurl quickly, pseudostems shoot up, and bunches fill — but the same warmth and standing moisture that drive that growth also drive the leaf fungi, so this is when airflow, sanitation, and vigilance matter most. The cooler, drier winter slows everything down; growth eases off, disease pressure falls, and it becomes the natural time for the heavier work of the grove — clearing, mulching, opening up crowded mats, and mending the terraces and roads before the rains return. Fruit that ripens in the cooler months tends to do so slowly, and slow ripening is almost always better ripening.
This year-round rhythm is one reason a banana grove has fed families on this mountain so reliably for so long. It does not gamble everything on a single window of good weather. It spreads its bets across the calendar and across its varieties, and it keeps producing a little at a time, month after month — which is exactly what a household, a kitchen, and a small community need.
Harvest and ripening
Timing the harvest is a skill, and it runs against the instinct of anyone used to buying yellow bananas in a shop. Bananas are almost always cut green. Left to ripen fully on the plant, the fruit tends to split, go mealy, and fall to pests and birds; cut green and ripened off the plant, it develops far better texture and keeps far longer. The farm team judges readiness by the fruit itself — the way the fingers fill out and lose their sharp ridges, becoming rounder and fuller in cross-section, which tells you the bunch has reached its potential even though it is still hard and green.
When a bunch is ready, it is cut from the pseudostem — and because that stem will never fruit again, it is felled at the same time and returned to the soil as mulch, closing the loop. The bunch is carried to a road and brought down by animal, then broken into hands for sorting. What happens next depends on the variety and the destination. Sweet dessert bananas are set aside to ripen slowly at ambient temperature, out of direct sun; ripe fruit naturally gives off ethylene, so a few ripening bananas quietly bring their neighbours along with them, no chemicals required. Cooking bananas like banana-da-terra are used across the whole spectrum — firm and green for savoury dishes, black and sweet for frying — so they are pulled at whatever stage a given dish wants. Because the grove carries several varieties fruiting on their own schedules, there is nearly always something coming ripe, which is exactly how a household farm is supposed to work.
Where the fruit goes
A working farm is defined by where its harvest ends up, and here the answer is: close to home, in that order of priority — the kitchen, the guests, and then the community down the hill.
The kitchen and the table
The first and largest share goes straight to the reserve's own kitchen. Ripe prata and nanica appear at breakfast; ouro turns up as a small, sweet treat when there is enough; and banana-da-terra becomes the fried, baked, and mashed backbone of a lot of what comes out of the kitchen, alongside the other things the grove and gardens grow. Green banana is cooked as a vegetable and turned into biomassa, the smooth cooked-green-banana purée that Brazilian cooks fold into savoury and sweet dishes alike. The chalets and the guests
The next share goes to the people staying on the reserve. A bowl of fruit that was on the plant that morning is one of the simplest pleasures of the place, and it is something no supermarket can match, because the most delicate and delicious varieties — ouro above all — simply cannot survive the journey to a shop. Guests are welcome to eat straight from the grove in season, to join a harvest, and to taste the difference between a banana ripened slowly a few hundred metres from where it grew and one picked hard and gassed for a container ship. It is a small education in what "fresh" actually means.
Local sale and the community
What the reserve and its guests do not eat goes down the mountain, as it always has, to be sold and shared locally around Paraty. This is not an export operation and never has been; it is a household and community farm whose fruit feeds the people of the valley, supports the families who work the grove, and keeps a three-hundred-year-old piece of living agriculture economically alive. Keeping the farm working is itself an act of conservation: it holds the soil, feeds the watershed, and keeps skills and knowledge in use that would otherwise be lost. A small number of eco-chalet stays helps fund the wider protection of the forest around it, and the grove is part of that same quiet economy — proof that land can be productive and protected at once.
Nothing wasted: every part of the plant
One of the quiet lessons of an old banana grove is how little of the plant is thrown away. The fruit is only the beginning. Because the plant is soft, fast-growing, and endlessly renewing, almost every part of it has a use, and a farm run on organic principles leans into that rather than hauling waste away.
The leaves are the most visible example. Broad, clean, and flexible, banana leaves are the original disposable plate and cooking wrapper of the tropics: food is steamed, baked, and grilled inside them, they line and cover dishes, and they carry a faint grassy fragrance into whatever they hold. When a leaf is too old or torn for the kitchen, it goes back to the ground as mulch. The flower heart — the coração — is peeled of its tough purple bracts and the tender core cooked as a vegetable, braised or added to stews, a delicacy that never leaves the farm because it does not keep. The pseudostem, once its fruiting is done, becomes both mulch and, in the process, a slow-release feed of potassium for the next generation of plants; its fibres have been used for cordage and craft on farms like this for generations. Even the corm has its role, as the living engine that throws up the next suckers, and as planting stock when a new mat is started elsewhere in the grove.
Add to that the culinary reach of the fruit across every stage of ripeness — green banana cooked as a starchy vegetable and turned into biomassa, half-ripe fruit fried, fully ripe fruit eaten fresh or baked into breads and sweets, and the last, blackest fruit dried or cooked down into doce — and you have a plant that is used, quite literally, from underground corm to fallen leaf. On a remote mountain slope with no easy way to import anything or export waste, that completeness is not a virtue added on for marketing; it is simply how the farm has always had to work, and it happens to be a model of the closed-loop, low-waste growing that the reserve stands for.
A grove full of life
Because it is never sprayed and never reduced to a single crop, the banana grove is not a break in the forest so much as a softer, more open extension of it — and it teems accordingly. The flowering hearts are a magnet for hummingbirds and bananaquits; the ripening fruit draws tanagers, thrushes, and, at the edges, the occasional toucan; and the deep, damp mulch layer is a world of its own, full of the beetles, worms, frogs, and fungi that turn dead plant matter back into soil. Standing quietly in the grove at dawn, you are as likely to be birdwatching as farming.
This is not incidental to the farming; it is central to it. The birds and insects that the grove supports are the same ones that keep its pests in check, and the unbroken cover of leaves and companion plants lets small wildlife move between the cultivated slope and the surrounding protected forest rather than hitting a dead edge. A grove managed this way blurs the line between farm and habitat, which is exactly the reserve's whole philosophy in miniature: that land can produce food for people and still be alive with everything else. It is one of the clearest, closest places on the property to watch that idea working, and one of the easiest to fold into a morning of exploring the reserve.
